One of my teachers, Cathy Martino, taught me to make a delicious salad and serve that to the kids veggies first. At an early age, veggies became a big part of our meals. Squeezing a little lemon and olive oil with a little bit of flaky salt at the bottom of the bowl was it fun trick. Also, a little squeeze a fresh garlic is magic over a salad.

I remember this Chef sat down next to me at a wedding and said if you could invest in one thing…invest in vinegar because good quality vinegar can make any salad taste great. I always make my dressings from scratch. Olive oil, lemon, a little bit of vinegar, salt pepper, some fresh herbs. And away you go.

As you can tell in the picture he didn’t like it at first… But now he loves salads.
